We use a rarely utilized ingredient, such as tripe, which also provides texture and flavor thanks to its collagen content. It is a surf-and-turf dish that combines elements from both land and sea.

Steps
1. For the cod:
- Remove the skin of the tripes with a knife.
- Slow cook the cods in extra virgin olive oil with the garlic and the cayenne during 20 minutes.
2. For the baby beans:
- Boil in water with salt during 5 minutes.
- Sautee the beans with a part of the extra virgin olive oil used to to cook the cods.
3. To finish:
- Cut the cod tripes in small pieces and place in the plate.
- Add the baby beans and the thyme.
